6 oz riced cauliflower
2 tsp olive oil
1 egg

1 oz peas
2 tsp soy sauce



Heat 1 tsp oil in a medium skillet over low heat. Add eggs and cook until cooked through. Let cool before dicing into small pieces; set aside.
Heat remaining 1 tsp oil in a large skillet over medium high heat. Add garlic and onion to the skillet, and cook, stirring often,Stir in broccoli, carrots, cover and cook, stirring constantly, until vegetables are tender, about 3-4 minutes.
Stir in cauliflower, corn ,peas, eggs, and soy sauce mixture. Cook, stirring constantly, until heated through and the cauliflower is tender, about 3-4 minutes and serve.


2 2 low carb cauliflower breadsticks 70 calories (8 serving)

ingredients :
6 oz riced cauliflower
2 eggs
1/2 cup+1/4 grated low fat mozzarella
salt and black pepper
1 tsp italian seasoning
marina sauce


Preheat oven to 350 degrees F.
Place riced cauliflower in an ovenproof baking dish  and bake for 17-20 mins. Remove cooked cauliflower from the oven and transfer to a bowl lined with a tea/linen towel. Let the cauliflower cool down a bit and fold the towel holding by the ends and squeeze the liquid out of the cauliflower.
Increase oven to 450 degrees F. Transfer cauliflower to a mixing bowl along with eggs 1/2 cup cheese, italian seasoning, black pepper, pinch of salt and mix to combine.
Transfer cauliflower mixture onto the baking sheet lined with unbleached parchment paper. Flatten with tbsp into a rectangle, approximately 10" x 7" size and 1/4" thick.
Bake for 16-18 minutes, remove from the oven and top with remaining 1/4 cup cheese. Bake for another 5 minutes and then broil until cheese turns golden brown. Cut into 8 breadsticks and serve hot with warm marinara sauce.




3 roasted cauliflower 250 calories (12 serving)

8 oz cauliflower florets
1 tsp olive oil
salt and black pepper
1 tbsp cream cheese
1 tbsp milk
1 tsp dijon mustard
1/4 cup cheddar cheese
1 garlic
green onion

Preheat oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.
Arrange the cauliflower florets on the baking sheet. Liberally spray with olive oil and season with salt and black pepper. Roast the cauliflower until tender-crisp, about 12 minutes.
Meanwhile, in a large bowl, mix the sour cream, milk, Dijon, garlic, and half the amount of cheese.
When cauliflower is done, add it to the sour cream sauce and mix to combine. 
Transfer the mixture to a quart baking dish. Top with the remaining shredded cheddar. Return to the oven and bake just until cheese is melted, about 10 minutes.
Sprinkle the cauliflower with green onion and serve.



4 cauliflower fried rice 400 calories (1 serving)

Ingredients 

1/2 small head cauliflower
1 egg
1 egg white
salt and black pepper
1 tsp olive oil
1 clove garlic
4 oz breast
1 tsp grated fresh ginger
1/2 red bell pepper
1 scallion
1/8 tsp dried oregano
1/2 tbsp reduced sodium soy sauce

Preparation

Heat a few drops of oil in a large skillet over medium heat. Add eggs cover and cook, without stirring, until fully cooked. Transfer to a cutting board and cut into 1 inch pieces.

Add 1 tsp olive oil to the pan, add ginger, garlic meat and cook, stirring, for 1 minute. Add bell pepper cut into strips scallion stirring, and cover until just tender, 2 to 4 minutes. Transfer everything to a bowl.

add cauliflower rice and stir until beginning to soften, about 4 minutes.

Return the meat mixture and eggs to the pan; add soy sauce and stir until well combined.

Ingredients 

7 oz cauliflower florets
2 tbsp milk
1 tbsp cream cheese
salt and black pepper
1/4 medium red onion
1 tsp olive oil
1/4 medium carrot
1 garlic
4 oz ground lean beef
1 oz frozen peas
1 oz frozen corn
parsley


Preheat oven to 350°. Add cauliflower florets in boiled water and cook until tender, 10 minutes. Drain well, and mash with a potato masher until smooth.
Stir in cream cheese and milk and season with salt and pepper and mash until completely combined and creamy. Set aside.

In a large skillet over medium heat, heat oil. Add onion, carrots, and garlic and cook until softened, 5 minutes. Add ground beef and cook until no longer pink, 5 minutes more.
Stir in frozen peas and corn and cook until warmed through, 3 minutes more. Season with salt and pepper.

Transfer the mixture to oven glass dish and top with an even layer of mashed cauliflower and bake 20 minutes or until is golden.
Garnish with parsley and serve.

Ingredients 

1 tsp olive oil
1 1/2 cup riced cauliflower
salt and black pepper
5 oz ground lean beef
1 garlic
3 oz broccoli florets
1 tsp soy sauce
salt and black pepper

7 Homemade pizza 320 calories (1 serving)

Ingredients 

1 head medium cauliflower
1 egg
salt and black pepper
1/8 tsp italian seasoning
1/4 cup mozarella cheese + 1/2 tbsp
1/4 medium yellow bell pepper
1/4 medium green bell pepper
1/4 small red onion
4 cherry tomatoes
3 tbsp tomato sauce

Preparation

Preheat oven to 400°F.
Remove the leaves and stem of the cauliflower and transfer pieces to a food processor and rice it.
Heat the grated cauliflower in a skillet--don't add oil or water--use medium heat. Stir until it has dried out somewhat, it won't dry completely, but the dryer the better. Heat at least 10 minutes.
In a bowl, beat 1 egg with salt, black pepper, italian seasoning and combine with mozzarella cheese.
Line a baking sheet with parchment paper and place the mixture in the middle. Spread out the mixture and form a circle out of the mixture, pushing along the edge to raise a “crust.”
Bake for 15 minutes, or until the crust has become golden brown in the center and on the edges.
Top with your favorite pizza sauce and toppings.
Bake for another 5-7 minutes.
